About the people who grow it

Honey processed coffee has nothing to do with bees! "Honey" is a designation that sits between "natural" and "washed." While “natural” dries the coffee cherry fully intact before hulling it, and “washed” removes almost all fruit pulp before drying, the “honey” process removes the skin but leaves some pulp on the bean during drying, giving a nice balance between the more fruity naturals and the cleaner profile of a washed coffee.
This honey-processed lot comes from producer Aida Milen Chasoy of Aponte, Nariño. A 29-year-old coffee producer, Aida works tirelessly on her family’s 1-hectare farm, “Salado Iaku.” The farm sits about 6,000 feet above sea level and has 3000 coffee trees.
Aida works side-by-side with her parents, preserving the traditions of the land while building a future for her child as a single mother. The connection to her farm and community runs deep, and each harvest reflects both her heritage and her hopes for the next generation.
Nariño, in southwestern Colombia, high on the slopes of the Andes, has always produced some of the most complex Colombian coffee. Very high altitude, proximity to the Pacific Ocean, and the canyons that cross the area create the perfect combo of weather and temperature that allows for a slow maturation of cherries and a full development of flavor. The area has many family-owned farms between 1 and 4 hectares. Family members manage them, taking care of the picking, de-pulping, and patio drying in farm premises and delivering parchment to dry mill for final sorting and classification of quality. The farmers are aided in their milling, marketing, and exporting by Pergamino Coffee in partnership with Terra Coffee in Nariño
